Tasting
Grapefruit pith, passionfruit and fresh-cut lime zest, with a green-herb lift — lemongrass rather than jalapeño.
Bright and linear. White nectarine and Meyer lemon over a saline, almost chalky center; acid does the structural work, not oak.
Clean and citrus-driven, with a faintly bitter pith edge that keeps it dry and asks for another sip.
In the cellar
Picked at night to hold acid, whole-cluster pressed, and settled cold before a long, cool ferment in stainless. No oak, no malolactic — the goal is transparency, not texture for its own sake.
Lees contact runs four months with periodic stirring for a touch of weight across the mid-palate, then a light fining and an early bottling to protect the aromatics that make this variety worth drinking young.
